Cooking Substitutions

When you don't have the ingredients that a recipe calls for, don't panic and run to the grocery store until you look over this list to see if there's a simple substitute for the ingredient.

BAKING INGREDIENTS
Ingredient Needed Substitution
1/2 cup molasses 1/2 cup honey
1 cup wine 1 cup apple juice
1 tsp. baking powder 1/2 tsp. cream of tartar
plus 1/4 tsp. baking soda
1 cup cake flour 1 cup regular flour sifted twice
minus 2 tbsp.
1 cup bread flour 1/2 cup regular flour
and 1/2 cup cornmeal, bran or
whole-wheat flour
1 package dry yeast 2 tsp. dry yeast
or 1 cake compressed yeast
1 square unsweetened chocolate 3 tbsp. cocoa
and 1 tbsp. butter or margarine
1 cup tomato juice 1/2 cup tomato sauce
and 1/2 cup water
1 cup beer 1 cup water
1 cup orange liqueur 1 cup orange juice
1 cup honey 1 1/4 cups sugar
and 1/4 cup water
1/2 cup graham cracker crumbs 1/2 cup saltine cracker crumbs
1 can cream of celery soup 1 can cream of mushroom soup
or 1 can cream of chicken soup
1 tsp. double-acting baking powder 1 1/2 tsp. regular baking powder
and 1 1/2 tsp. vinegar
1 large marshmallow 10 miniature marshmallows
1 tbsp. flour to thicken 2 egg yolks
or 1/2 tbsp. cornstarch
or 2 tsp. quick-cooking tapioca

 

DAIRY PRODUCTS
Ingredient Needed Substitution
1 egg 2 egg yolks
and 1 tbsp. water
or
1 tsp. unflavored gelatin mixed
with 3 tbsp. cold water
and 2 tbsp. boiling water
2 egg whites 1 egg white
and 1 tbsp. ice water
1/2 cup honey butter 2 tbsp. butter or margarine
1 cup whole milk 1 cup water
and 4 tbsp. plus 2 tsp. melted butter
or
1/2 cup water
and 1/2 cup evaporated milk
1 cup skim milk 1 cup water
and 4 tbsp. nonfat instant milk
1 cup whipped cream 1 egg white whipped
with 1 sliced banana
1 cup sour milk 1 cup milk
and 1 1/2 tsp. lemon juice
1 cup buttermilk 1 cup milk
and 1 1/2 tsp. vinegar
1 cup whipping cream 1/3 cup butter
and 3/4 cup of milk
1/2 cup butter 1/2 cup shortenng
and 1/4 tsp. of salt

 

SEASONINGS
Ingredient Needed Substitution
1 tsp. instant onion 4 tbsp. chopped fresh onion
1 tbsp. fresh parsley 1 tsp. parsley flakes
1/2 cup ketchup for cooking 1/2 cup tomato sauce
1 tsp. vinegar
1 cup sugar
1 tsp. dry mustard 1 tsp. prepared mustard
1 cup chopped onion 1/3 cup dehydrated onion

 

FRUITS and VEGETABLES
Ingredient Needed Substitution
mandarin oranges pineapple tidbits
8 oz. can grapefruit 1 medium fresh grapefruit
1/2 lb. fresh mushrooms 4 oz. can mushrooms
10 oz. frozen peas 8 oz. can peas
8 oz. whole tomatoes 8 oz. can stewed tomatoes

 

MISCELLANEOUS
Ingredient Needed Substitution
1 can chow mein 1 can potato shoestrings
or
3 cups cooked rice
1 cup hominy 1 cup cooked rice
1 cup cooked rice 1 cup cooked noodles
1 cup seasoned bread crumbs 1 cup regular bread crumbs with 1 tsp. black pepper
1/2 cup pecans 1/2 cup walnuts
or
1/2 cup almonds
1 lb. ground pork 1 lb. ground beef
1/2 cup cubed ham 1/2 cup chopped luncheon meat
8 oz. can chili beans 8 oz. can kidney beans
and 2 tsp. chili powder
